[OTel] Update the enrichment logic around `rpc.*` as per the new semconv changes

Breaking changes in RPC listed here: https://github.com/open-telemetry/opentelemetry-go-contrib/blob/main/CHANGELOG.md#changed

The enrichment logic needs to be updated to cover these.
